Assassins Creed Needs An Option to Play ...

I beat Assassins Creed a year ago, and thought it was a really fun game. But I noticed that once u beat the game you really cant go back into the world without having to repeat a mission. I really wish they designed it like GTA where u can do anything after you beat it. Or am i Missing something?
